Turkey at the Stoplight Stuffed Peppers

Celebrate Independence day with Turkey at the Stoplight Stuffed Peppers, a quick and healthy meal for the skillet or even healthier when roasted on the grill!

Turkey at the Stoplight Stuffed Peppers

Ingredients

1 lb of ground turkey (extra lean or 93%)
1 Tbsp avocado oil OR coconut oil
1 tsp ground black pepper
1 tsp cinnamon
2 cups of shredded carrots
Bell peppers (red/yellow/green)

Heat skillet with avocado or coconut oil, (cook on MED heat) then add ground turkey and cook halfway. Add ground black pepper, cinnamon and shredded carrots. Cook ground turkey completely and mix occasionally. Pre-heat oven to 350 degrees and wait until ready. Lastly, chop the stems (allowing you to see inside the bell pepper) of the bell peppers and stuff them with your ground turkey mixture and place them in the oven for 15-20 min.

1 recipe makes 3 servings (3 bell peppers). 388 calories, 24g fat (good fat), 24g carbs, 25g protein
