Muscle Making Lean Beef Spinach Meatball Pasta

We're kicking off May with this tasty recipe from the Personal Trainers at The Alaska Club Wasilla. For a quick and healthy meal any time or a weekday family dinner, nothing beats turkey meatballs with veggies and a light pasta.

Muscle Making Lean Beef Spinach Meatball Pasta

Meatballs
6 oz lean ground beef
1/2 c shredded raw spinach
1/4 diced red onion
1 tbsp minced garlic
1/2 tbsp cumin
Sea salt and pepper to taste
Coconut oil

Pasta
2 oz wheat spinach pasta
1/8 c natural and low sodium marinara
1/2 c raw spinach
5 cherry tomatoes
1 tbsp low fat parmesan cheese

Set oven to 450ºF.  
Sauté the red onion in skillet w/ coconut oil.
Mix ground beef, chopped onion, garlic, and spices.
Mix thoroughly using hands until spinach is completely mixed in with meat.  
Form 2 or 3 meatballs, place on a baking sheet and bake 10-12 minutes.
Cook pasta and stir in tomatoes, spinach, and cheese. Enjoy!

1 recipe makes 1 serving. 468 calories, 6g fat, 50g carbs, 51g protein
